Easy ‘No Fail’ Peppermint Bark

Hey Hey friends!  We are a week away from the big day! Are you done with your shopping yet?  I have a few loose ends to tie up but otherwise we are pretty much done.  This week is all about delivering to teachers, therapists, and all the people (the village) that are part of my kids lives that educate and make them better people every day!  In this post, I shared a few ideas for holiday gifts Three ‘Random’ Things but I also bake a few goodies to give as gifts too.   Today I have 2 easy ‘No Fail’ #youcanmesstheseup holiday recipes…  Peppermint bark and Rolo pretzels! Both are a holiday favorite and so easy to make!

Peppermint Bark

What you need (I bought everything from Aldi):

  • 1 large bar of chocolate almond bark
  • 1 large bar of vanilla almond bark
  • Peppermint extract
  • Candy canes – crushed

Method:

Melt half a bar of chocolate almond bark in a microwave safe bowl. I love my batter bowl from Pampered Chef.  I melt the bark in 30 second increments stirring until smooth.  Add 1/8 tsp of peppermint extract after it’s melted.

Pour the melted chocolate on a lined baking tray with wax or parchment paper and       freeze for 10 minutes.

Crush 10 candy canes. I put them in a Ziploc bag and crush them with a meat mallet.

Melt half a bar of vanilla almond bark (same way as chocolate) You can add another 1/8 tsp of peppermint extract but I don’t because I don’t want it to be too strong of a peppermint taste.

Take the chocolate layer out of the freezer and pour the vanilla bark over it.

Sprinkle the candy canes over the vanilla bark and freeze for 30 minutes.

Take it out and let it come to room temperature and break into pieces.

I repeat this process for the other half of the bark. I find it easier to do two batches separately.

I put them in fun gift boxes with holiday candy and my other easy recipe … Rolo pretzels!

Rolo Pretzels

What you need:

  • 2 bags of Rolo candy
  • 1 bag of M&M’s (Holiday themed)
  • Pecan pieces
  • 1 bag of pretzels

Method:

Preheat oven to 350 degrees

Line a baking sheet with wax or parchment paper and add pretzels. Put a Rolo on each pretzel.

Put in the oven for 3-4 minutes.

Place pecans or M&M’s (I did both) on each Rolo pretzel.  Once placed, I tap each one down gently to make it flatter.  Place in the freezer for 10 minutes.
