Hey Hey friends! How was your week? It’s been a busy one but who am I kidding? It’s always nuts over here trying to keep everyone in line and on schedule as best as we can. Next week is the final week before Thanksgiving break and I cannot be happier for the holiday break. Yes, I do like it when my kids are home. I like NOT having to set an alarm, I like NOT having to pack lunches, and I like NOT having to constantly hound my kids to do their homework #thestruggleisreal We are all looking forward to a break with an extra bonus that Karl is off the entire week too!
This week was a week of doctor appointments for me. At the end of the year I finally get to ME and make sure I see all my doctors… the yearly physical, rheumatologist, eye, GI, gynecologist and the ever fun mammogram. I am not one to run to the doctor for every darn thing. They say when you are over 50 (per my gyno) you SHOULD see each of your doctors once a year since ‘stuff’ can creep up so be pro-active NOW.
First up – getting the girls checked Uneventful so now I wait for the ‘letter’ that all is clear in the next 2 weeks.
Second – the eye doctor My annual check. I am near-sighted and really only wear glasses for driving in the rain or at night. In the last few months, I’ve been reaching for my glasses while driving at night. I did get gold stars and all looks good. No need for a new script but possibly new glasses since mine are 15 years old!
Third – GI doctor I suffer from reflux due to having Scleroderma. Just a follow up to get more meds to keep it under control.
Recipe of the week
The ever famous Zuppa Toscano soup from Olive Garden is so good! I gave it a Keto makeover since I don’t do a lot of carbs. It has been very cold in Atlanta. I think we had Spring for maybe 5 days? I am not kidding! We literally went from 90 degrees to 40 in a week! Cold weather calls for hot soup and my kids love this one. Instead of using potatoes, I used cauliflower and in addition to the kale, I added spinach. I made almond flour biscuits for me and the kids had regular biscuits. My kids devoured it!
2 packages of sausage, half cup of onions, 1 tbsp of garlic (I use jarred garlic because I hate chopping garlic) , 5 slices of bacon, salt, pepper, 1cup heavy cream, 3 large handfuls of kale and spinach, 2 cups of cauliflower (rough chop), 3 packages of chicken stock and 4 cups of water.
How to make it:
In a frying pan
Cook the sausage until no longer pink. Remove from pan and set aside.
Sauté 5-6 strips of bacon. Remove from pan and set aside.
Cook onion and garlic in bacon grease.
In a large stock pot
Add cooked sausage, bacon, garlic, onion, chicken stock, water, heavy cream and cauliflower. Cook on medium for about 20 minutes until cauliflower is tender. Add spinach and kale. Simmer for 20 more minutes! Enjoy!

Every year Riley’s baseball league – North Metro Miracle League – treats the NMML families to see A Christmas Carol. This year it was back at the newly remodeled Alliance Theatre. It was an amazing show and definitely got us in the holiday spirit so much that I already started pulling out my Christmas décor and have one tree up!!! I only took the big kids with me as the twins did not want to go so they had a ‘date’ with dad 🙂

I don’t believe in taking pills to help you lose weight. I completely agree with putting in the hard work of exercise and cleaning up your diet. But if you need a little help there’s nothing wrong with taking a supplement. If I didn’t rep these products I would still use them as they are all safe and natural from good ingredients.
