How’s it going? Kids have been back in school 7 days and we are getting into a routine again with all the new schedules. My 8th grader, Riley, is staying in middle school one more year. Why you ask? Because he can go to school until he the day he turns 22 years old so it really doesn’t matter. He loves (and so do we) his amazing middle school teacher and decided he should stay one more year with her and then move on to the CBI program in high school until he is 22. I am thrilled that he will finally be at our ‘home’ school in the district he lives in and be with his siblings when they all get there. I also have a new 6th grader and the twins are in 4th grade. So far everyone is happy, the schedule and routine are slowly coming along and we are working into our new normal again for the school year, or should I say the after school ‘uber’ has started?? LOL!
In getting back to our routine, I am always on the lookout for easy meals that are good. If you remember this post from last Fall Meal Planning for 6 I pretty much keep it simple and base our meals around a few proteins but I also like to try different recipes so we don’t get bored with the same meals. Since I live the Keto lifestyle, most of our dinners are Keto with a protein and vegetable cooked in good fats. I do add a carb for my kiddos. I love quiche but haven’t eaten it in almost 2 years due to the crust. I found a recipe to tweak and made an almond flour crust! It so good and you are totally going to want to make this!
EASE OF PREP: Easy
PREP TIME: 15 Minutes
COOK TIME: 1 Hour 15 Minutes
TOTAL TIME: 1 Hour 30 Minutes
What you will need:
THE CRUST:
Add the almond flour, butter, egg, salt and blend well. I microwave the butter to liquid to make it easier to mix. Press into a quiche dish or pie pan and bake at 350 degrees for 30 minutes until crust is golden brown.
THE QUICHE:
While the crust is baking, in a medium pan, melt 2 tbsp. of butter and cook the onions until transparent. Add the broccoli. Cook until broccoli is tender. Set aside.
Mix remaining ingredients in a bowl – eggs, whipping cream, cheese, bacon crumbles (optional) salt, pepper and parsley flakes (you can use fresh).
Once the crust is done spoon the broccoli over the crust and then add the remaining ingredients over top. Make sure you pour it evenly across the broccoli.
Bake at 350 degree oven for 50 minutes until the eggs are set.
This was so good and so easy to make! I guarantee you and your family will love this quiche! I served it with a chopped salad and vegetable on the side.
