
Hey Hey Friends! It’s officially Summer break here in Georgia and I don’t know who is happier, me or my kids LOL!! I am looking forward to slowing down a bit and enjoying the summer with my kids. They will still have to get up (not as early) for swim team, keep up with their chores, and do a little bit of ‘homework’ but it will be a bit more laid back. They are looking forward to having fun and checking things off their Summer bucket list. I will share our Summer bucket list and that ‘homework’ in a future post.
Today I want to share a super easy recipe that is not mine but needs to be shared. This recipe was given to me from my friend Randi. She made this for a potluck we had at my house and it went fast! I have made it several times, my kids LOVE it, and we have a great leftover recipe for it too. It’s just too easy and good and needs to be shared. It is Keto and Paleo approved too!
What you need
6 large chicken breasts
1 packet of Ranch dip mix
1/2 bottle or 2 cups of Frank’s Red Hot sauce
Using your crock pot, add all the ingredients – 6 chicken breasts, 1/2 bottle or 1-2 cups of Frank’s Red Hot sauce, and 1 packet of Ranch dip. Cook on LOW for 8 hours or on HIGH for 4-5 hours. And that’s it!!
You literally set it and forget it! Looks like this in the crockpot after it’s done.
Take a few pieces out and shred with 2 forks and serve! Depending on how much hot sauce you used, it can be a little spicy but it is so good!
For my kids I serve with gluten free white rice and a vegetable. Since I am Keto, this is one of the ways I eat it, with bacon, tomatoes, and avocado. I have also eaten it with a side of veggies.
Even with my family of 6 we always have leftovers. I use the leftovers to make chicken and cheese quesadillas for my kids. I always make sure I have a large package of chicken breasts on hand as well as Frank’s Hot Sauce and Ranch dip. This will definitely be in our summer rotation. Takes less than 5 minutes to prepare before we head out for a fun summer day and a healthy meal to eat when we get home.

Sounds yum! I don’t cook in my slow cooker much now but I for sure will do it more in winter time.
