The BEST ‘made Keto’ Wedding Soup

Is the perfect time of year for soup and our favorite around here is wedding soup.  Being Italian,  I grew up eating wedding soup.  My mother made it all the time.   She gave me her recipe that I have made for years but since I have gone Keto/Low Carb, I have tweaked it a bit which wasn’t hard to do so I could #keepitketo and still give my kids the pasta they love.   My mother always used escarole but it’s hard to find at your local grocery store. Any international market will definitely have it but I just use a spinach and kale mix.  My kids love this soup and I love that they are getting greens! For my family of 6, this is what I use and usually have some leftovers. 


  • 2 lbs of ground meat
  • 1 lb of ground pork
  • 1 box of spinach and Kale – I used this large box from Kroger.  Use it all – it will cook down.
  • 3-4 boxes of chicken broth AND 8 cups of water
  • 1 cup of parmesan cheese or more or less
  • 2-3 eggs. See note below.
  • Eyeball (I am a Rachel Ray kind of gal) the following seasonings – oregano, basil, onion powder, garlic powder, salt and pepper 
  • 3  tbsp. of garlic – I used garlic in the jar
  • 1/4 of minced onion
  • 2 tbsp. olive oil


Combine meats in large bowl adding eggs, cheese, seasonings, 2 tbsp. of garlic, and minced onion – set aside (Usually 2 eggs will do it but if the meat is not binding add another one)

Mix meat, pork, cheese, eggs and seasonings

Heat olive oil in large stock pot over medium heat add garlic and cook for 1 minute.  Add all the chicken broth and water and let it come to a boil.  As it is coming to a boil start rolling the meatballs to whatever size you’d like.  I make the meatballs small so its easier to eat.  As you roll the meatballs throw them in the soup as you go and bring them to a rolling boil.  Boil on high/medium for 5 minutes and turn to low.   Throw in the spinach/kale by the handful. Boil for another 15-20 minutes until the greens cook down.

If you are not Keto, you can add small pasta like elbows or ditalini but I would boil the pasta separately and add it to each bowl when I serve it.  If you are Keto, you can either eat the soup as is or add riced cauliflower as your ‘pasta’.   I used this brand but you could also use the frozen type.


My kids love this soup and it is perfect comfort food on a cold day.  I have made homemade pizza on the side for my kids.  My pizza is pretty simple:  I cheat and buy prepared dough from the bakery at the grocery store, let it rise all day, roll it out,  and add sauce and toppings.   For Keto, I will make these awesome low carb almond muffins I found here:  keto/lowcarb biscuits

And the finished product!  This soup is so good and perfect for a cold day!
